merton simple, merton 100% wholemeal (and two new posts)

Dear bread friends

Two new posts on the blog this week: 100% wholemeal, on baking tin loaves with sieved and scalded bran, and scald vs tangzhong, on the difference between two techniques that make a big difference to the texture and taste of a loaf's crumb.

I'll be fermenting Merton Simple and Merton 100% wholemeal loaves (the tin ones from the post above) this Saturday, baking early Sunday morning. No more than two of the wholemeal loaves are available because I've only got two tins!

If you'd like a loaf, please get in touch by Thursday 30 July at 5pm. Collect from Earlsdon on Sunday morning.
