Hello bread friend

I'm back from a brief trip where I was working on building this clay wood-fired oven.

That's the first layer done and once it is fully dried we will build an outer layer of clay and hay to help keep some of the heat in. You can see the sand still inside – this was the mould or form for the shape of the oven.

I'll be fermenting Merton khorosan loaves on Saturday 18 July, baking them early Sunday morning. I'll be taking orders for 700g loaves, so if you'd like a loaf (or more), please get in touch by Thursday 16 July at 5pm. Collect from Earlsdon on Sunday 19 July from 08:30 onwards.
