Fish of the Quarter: Garfish “Gar”-nering Our Attention
If you've spent any time in the tinned fish world recently, you've probably noticed a lesser known star generating buzz: garfish.
While sardines remain the backbone of the conservas world, with over 530 sardine tins currently cataloged on Tinventory, garfish has quietly become one of the community's most talked-about tins.
Long, slender, and often mistaken for needlefish, garfish offer a remarkably mild flavor with a firm texture that lands somewhere between sardines and premium tuna. They’re rich without being overly fishy, making it an excellent introduction for anyone looking to branch out beyond the classics.
Unlike sardines, garfish were never a mass-market staple. Historically, they were a prized seasonal catch in Portugal and Spain, carefully hand-trimmed and packed by skilled cannery workers due to their delicate, elongated shape. As traditional conservas evolved throughout the twentieth century, producers shifted from simple preservation methods to packing garfish in high-quality olive oil, piri-piri peppers, and aromatic spices that highlighted their naturally clean flavor.
Today, brands like Ramón Peña, José Gourmet, and others have helped transform garfish into one of the most sought-after tins on specialty shop shelves. They’ve become a favorite among conservas enthusiasts looking to explore beyond sardines, mackerel, and tuna.
