The Sides (Part I)
I knew from the start of this project that getting to all of the sides was going to be the hardest part and, sure enough, I’ve had to split this one in two. Look for the second edition later this week.
Side dishes are many things — for many people, they are the reason for the season. For me, they’re an opportunity to really bring the meal together and make the flavors harmonize. That might mean an undercurrent of sage from the stock that flavors the gravy to the sausage in the dressing. If you are aiming for a regional theme, it could mean chipotle sweet potatoes to go with a smoked turkey.
And while nobody shows up to the Thanksgiving spread expecting to hit all their macros, it’s important to strive for balance. Turkey with carbs four ways is a great dinner for the average nine year old, but be sure to include plenty of vegetables — which we’ll get to in the next newsletter, I promise.
