Hello, this is the first premium edition of Thanksgiving FYI. Here I’ll share a few more tips and recipes I go back to time and again and have tested and tweaked through the years. And thank you again for your support, I truly appreciate it!
The flavors of Thanksgiving
One of my all time favorite, and most referenced, cookbooks contains no recipes; The Flavor Bible1 starts with a few chapters that read more like a meditation on the deeper art of cooking followed by hundreds of pages — literally — of flavors that include a season, taste profile, and then dozens of pairings of other flavors. It’s almost database-like, if that database were compiled by a monk dedicated to trying and cataloging every food.
We all know the flavors of Thanksgiving, though, right? Turkey, potatoes both mashed and sweet, butter, that mix of “poultry herbs”, cranberry, pumpkin, and pecan. To get a little more out there, our flavor profiles are roasty or autumnal or maybe just brown. We know what Thanksgiving tastes like!
