Papua New Guinea 🇵🇬

Hello Sideyard Friends,

This week’s roast is a Papua New Guinea. I’m tasting brown butter, toffee, and a hint of pineapple at times. It’s a right down the middle roast with just enough interest to keep me interested. Unfortunately, we’re fresh out of extras.

I’m trying out a new roasting schedule whereby I roast one week ahead. In other words, this week’s delivery was roasted last week. This new schedule gives the coffee a little extra time to de-gas which has two benefits: 1) because flavor profiles change a lot in the first few days it’ll make the flavor notes a bit more predictable, and 2) it will keep everyone’s brewing equipment a little cleaner due to smaller brewing blooms as a result of less off-gassing during brewing.

The origin track for the week is Drim Bilong Me by George Telek.

Next week’s coffee is a natural Burundi.
