Sourdough Discard Tortillas!

While I was working on Let’s Make Bread with Ken Forkish, I baked my way through every single recipe in the book. Mostly because I wanted to get the drawings of the textures right, but also because bread is delicious. :)
When I had my levain culture going, figuring out what to do with the discard was a weekly puzzle. I tried pancakes, crackers, English muffins, pizza dough, every recipe I could get my hands on. Sourdough flour tortillas ended up being my favorite, and I started making a batch of them almost every time I fed my levain. Here’s what I did:



I think this was Niles’s favorite thing I made during that project. I think he might have liked the tortillas better than the bread itself. ^_^ The tortillas stay soft for several days, and have just a lightly pleasant tang to them. They made marvelous tacos.
I found it too much of a headache to keep a levain culture alive in my drafty apartment during Chicago winters, so I’m not making these regularly anymore. The weather’s starting to warm up here, though, so maybe it’s time to get a new starter going. It would need a new name, though. My old one was named Breadward. :)

What I’m into lately: Feh. I’m not sure. We’re two episodes away from finishing Severance season 2, which is absolutely riveting. I’m reading the Lost City of Z for my book club, but not loving it; I think I just prefer fiction in general. I’ve been thinking about deleting and rebooting my Animal Crossing island, which feels like it might be a bad sign for my emotional state? >_< And I’m about to start reading Delicious in Dungeon as a kind of manga book club with my nephew. :) But mostly I’ve been scattered because of my recent trips and the dev edit for the cocktail book, and haven’t had a lot of energy to focus on anything huge.
What Toki’s into lately: Playing with a ball of yarn like a goddamned cliché. Don’t worry, I took it away from him.
