Recipe: Winter Squash Pasta Sauce!

Looking for something to do with that winter squash you roasted? Why not a creamy, indulgent pasta sauce?

Winter Squash Pasta Sauce. Cook 8-12 ounces any pasta - reserve a cup of the starchy water - 1/2 onion, diced; 4-5 cloves garlic, minced - season with salt, pepper and paprika - cook over medium heat in a little oil until translucent - add 1 cup roasted winter squash, 1/2 cup grated parmesan, 3/4 cup reserved pasta water - whisk until smooth - or use an immersion blender
add the drained pasta when it's done cooking and a splash of lemon juice - stir until combined- try topping with a little crispy bacon and some dried sage

I roasted a huge butternut squash today, and made this pasta with just a fraction of it! I will probably make a soup with the rest of it. I love a good butternut squash curry soup when it’s chilly outside.

I have returned from SLICE 2025, where I had a marvelous time with old friends, met some new friends, and sold a lot of books! I also picked up this adorable minicomic by Aayesha Ejaz when I was at Betty’s Books, a lovely comics shop in Webster Groves. I’m starting to amass a neat little collection of different recipe minicomics and zines! If you know of a foodie comic or zine I should pick up, let me know!

⭐Chicago Scene Report:⭐

I wasn’t able to attend the weekend’s protests because I was exhibiting at SLICE, but it sounds like maybe 250,000 or more Chicagoans showed up to exercise their freedom of speech and assembly. And that’s just the downtown event; there were dozens of other protests in other neighborhoods and in the suburbs. The administration has responded in a predictably ugly way, of course.

The good news is, even outside of the protests, everyone I know is doing SOMETHING. I have friends volunteering as escorts for school pick up and drop off to protect school kids and their parents. I have friends doing food bank deliveries for people too afraid to get food for their families. We were at a bar last night where a local radio station was giving out free whistles! And I have friends hosting and attending rapid response training and education sessions. Chicago is really coming together in an amazing way.

What I’m into lately:

I’ve been listening to the audiobook for Just Like Mother by Anne Heltzel. It’s pretty eerie and disturbing (and unfortunately timely) so far, with great characters and excellent writing.
