Recipe: Sick Day Kimchi Fried Rice

Not a proper way to make fried rice, but a proper way to clear out those stopped-up sinuses.

Sorry this is a day late! I was observing Casimir Pulaski Day. u_u In actuality, I am a little behind on everything because I had a head cold last week. It made me very sad and cranky. Thankfully I was able to improvise a good spicy lunch to clear out my sinuses!

Sarah’s sick day Kimchi fried rice

This is not a proper fried rice technique! 

But it’s great if you’re cranky and tired because you have an annoying head cold. 

1 tbsp oil
4-5 cloves of garlic, thinly sliced
4-5 mushrooms, sliced
1/4 cup or thereabouts of kimchi (I had garlic and green onion kimchi on hand)
1-2 tbsp of kimchi brine
1/2 cup leftover white rice
1 tbsp gochujang

Choose whatever pan is clean and easily accessible to you in your convalescence.

Heat the oil in a pan over medium-high heat until it shimmers.

Add the sliced garlic and let it cook for a minute or two, until just fragrant. (Or what would be fragrant if you could breathe through your nose right now)

Add the mushrooms and stir. cook for about 5 minutes.
Then add the kimchi, and the kimchi brine, and stir. cook for another 3-4 minutes. 

Then crumble in the old rice. Try to separate the grains as much as you can in your weakened state.

Add the gochujang and Stir to incorporate everything. 

The rice will absorb some of the kimchi juices as it cooks, and the gochujang will soften in the heat and eventually mix evenly. 

 Scrape everything into a bowl and leave the pan for your partner to clean up later. 

Enjoy as this dish temporarily clears out your sinuses!

I want to emphasize that this dish, while absolutely delicious, is not the “proper” way to make a fried rice. Maybe I will address that in a future newsletter? In the meantime, I am feeling a lot better, thankfully! But I made this dish three days in a row, and I have almost completely used up our tub of green onion kimchi. We’ll have to head back to Joong Boo for some more soon!

What I’m into lately:

As I’ve said, I’ve been asking friends what their favorite books are and tossing them in my library queue. This week I read Cat’s Eye by Margaret Atwood, recommended by my good friend Liz. I’ve read several of Atwood’s books before (The Handmaid’s Tale, obviously, and I devoured the Oryx and Crake trilogy) but I hadn’t read any of her less speculative-fiction works. Cat’s Eye was written in 1988, so it’s a bit dated, but it’s powerfully emotional and deeply introspective. It left me thinking a lot about internalized misogyny, and just how incredibly lucky I am to have so many strong, genuine, meaningful and rewarding friendships with other women in my life.
