Recipe: Coconut-Passion Fruit Popsicles!

My hatred of throwing away food is the mother of invention. (>_<)

A recipe for coconut-passionfruit popsicles, involving passionfruit pulp, cream of coconut, coconut flakes, greek yogurt and honey

I really do have a lot of random ingredients that I don’t normally use now, all left over from cocktail recipe testing for the new book. Rose water! Orgeat syrup! Pomegranate juice! I knew the the passion fruit pulp wouldn’t be good for very long, and I couldn’t think of anything else to do with the cream of coconut, but two great tastes definitely go great together (in popsicle form). These turned out deliciously tropical, a great combination of tart and sweet plus the rich creaminess of coconut. You can usually find passion fruit pulp in the frozen section of a Latin American grocery or bodega, and cream of coconut (I used Coco Lopez) can be found in most standard American grocery stores.

I’m a huge fan of homemade popsicles, by the way. Now that the weather’s warming up here, I should probably draw my favorite Breakfast Popsicles recipe for you at some point too. (^_^)

Upcoming Things:

I will be at CAKE Chicago June 28 and 29 at the Irish American Heritage Center! I really need to order more books and other supplies for that soon. (・_・;) I’ll also be at the Wisconsin Book Festival in Madison in October, and I’ll probably be at a Chicago Public Library comicon at Sulzer Regional Library in December; more on that as details develop.

Hey Sarah, how’s the book going:

Still going! I have 120/192 pages outlined, so I’m well on track to have completed pencils to the publisher by the end of the month.

What I’m into lately:

Dude, I don’t know! I’m a little under halfway through Lost Man’s Lane by Scott Carson, but it’s not really grabbing me. I need good spooky creepy audiobooks to listen to while I sit and draw for hours and hours! I’m open to your recommendations, especially if it’s got a haunted house. In the meantime, Sparks’ excellent new album MAD! is on heavy rotation at our place.

What Toki’s into lately:

Trying (unsuccessfully!) to intimidate the neighborhood squirrels.
