My Favorite Fish

Let’s talk about sablefish! A few years ago, Niles signed us up for a Sitka subscription. They send us a box of frozen seafood every month. Sometimes we get salmon, sometimes halibut, cod, tuna, shrimp… and sometimes, we get sablefish.

Sablefish live on the deep sea beds of North Pacific Ocean waters.

They hang out on the ocean floor and eat other fish, squid, and jellyfish.

They can live over 90 years! But most of the ones we catch are 20-40 years old.

In North America, they’re mostly caught wild near Alaska, British Columbia, and the US Pacific Northwest.

Fishing is well regulated, and the fish is rated green by Monterey Bay Aquarium’s seafood watch.

It’s high in omega 3 fats, and the flesh is buttery and succulent with a silky texture.

I had never even heard of sablefish growing up. My parents are both from north central Texas, and they were never huge fans of seafood. (To be fair, when they were young, there probably wasn’t any very good or fresh seafood available in the DFW or Wichita Falls areas.) I have always enjoyed seafood – I love salmon, I love any kind of whitefish, I adore shrimp – but this Sitka membership was my first encounter with sablefish, and I had never had anything like it. It’s delicate and flaky like whitefish, but it’s somehow silky and buttery at the same time. The flavor is rich and savory but mildly sweet. I couldn’t believe I’d never had it before.

And then one night, Niles marinated it in miso and broiled it, and it was incredible. Miso-marinated sablefish was made famous by Chef Nobu Matsuhisa's Nobu Restaurants, but it’s a very traditional Japanese way of preparing and serving this fish. It’s marvelous, and very probably, my next newsletter will be that recipe.

What I’m Into Lately:

I am currently reading The Caretaker by Marcus Kliewer! I love a good spooky house story (probably more than is strictly healthy), and Kliewer’s We Used To Live Here was spectacular. The Caretaker has many of the same themes, but that honestly suits me just fine. It’s atmospheric and creepy and tense and I’m very much enjoying it.

What Toki’s Into Lately:

Toki has been napping behind the dvds on our little TV shelf lately. I tried to get a good picture of it this week, but once he realized I could see him, he barreled out of there and knocked a bunch of dvds on the floor. A hiding place is no good if people know about it, I guess.
