Lunch Salad, 2025

I work from home a lot, and it can be a struggle to take the time to make something good and tasty and healthy for lunch. It’s very tempting, when it’s just me, to pick something quick and easy. The good news is, the Universal Condiment makes a banger of a salad dressing, so now I’m all about meticulously constructed lunchtime salads. It definitely helps that the farmers markets have started back up again and there’s a ton of fresh greens at my disposal.

My Latest go-to lunch salad: A creamy dressing made from yangnyeom sauce and kewpie mayo; cheese: lately, a young smoked gouda, cubed; chicken thigh: lightly salted, sauteed, chopped
A handful of cherry tomatoes; sliced baby bella mushrooms; onions: lately, springy green onions (both white and green parts)
On a bed of fresh butter lettuce

In other news, Niles and I are having some friends over and Niles is making a pot of his fabulous cioppino for the occasion!! I have been working on writing up his recipe for it, so watch out for that in next week’s newsletter!

Hey Sarah, how’s the book going:

48/192!!! I’m on track, and finally settling into a decent rhythm. It feels a little less like pulling teeth.

What I’m into lately:

Finished The Shadow of the Wind by Carlos Ruiz Zafon! It was such a beautiful love letter to books, and also to Barcelona (which I have never seen and now I want to). Currently reading Staircase in the Woods by Chuck Wendig, which feels like a nice counter stretch. Shadow of the Wind is gorgeous, but is full of lots of complicated lyrical prose. Wendig’s books are usually pretty fun page-turners. The only drawback: I got it from the library, and it’s pretty new, so there’s a long list of people with this in their hold list waiting for me to finish. >_<

What Toki’s into lately:

Crushing the windpipes of the humans who feed him.
