A Bit About Klobásníky

I mentioned these briefly in my last newsletter about kolaches, but there’s more to say on the topic of klobásníky.

Klobasniky: Klobasniky use the samesweet brioche-like dough as kolaches, but they're filled with sausage or other meat. In many places in Texas, the meat filled klobasnik is the only "kolache" people know! For a while, these were thought to be an invention of Czech immigrants in Texas. But there seems to be a tradition in Czech Silesia, in the far northeast of Czechia, where klobasniky are made as an Easter treat.
In Czech Silesia, they would have been made with Klobasa, a type of sausage. In Texas, they're made with klobasa, but also with hot dogs, ham, cheese, chicken, eggs and more! I've seen them made with chorizo, cajun boudin sausages, BBQ brisket, and even birria! I like to make them with Longganisa sausage. Filipino longganisa sausages are spicy, savory, with a touch of sweetness, and their flavors marry deliciously with the kolache dough.

Since making a few comics about kolaches for this newsletter, I’ve been mulling over the kolache minicomic I had been planning, and I’ve decided to reorganize it completely. It will have my kolache recipe, but also full recipes for the fruit, cheese, and poppy seed fillings, plus recipes for buchty rolls, Moravian style double-layer kolaches, Wallachian frgály (big pie-sized kolaches), klobásníky, and maybe even a few more things. It’ll be a little pocket kolache comic book cookbook! I’ll share the art here as I work on it – honestly, this newsletter will probably be the best motivator for me to actually get this comic made.

I have really, really missed this. When I started “I Think You’re Sauceome” as a webcomic 15 years (!!) ago, it was my excuse to draw regularly, but it was also my sandbox. I used it to experiment, to try using different media or layouts or techniques. I’m very happy to come back to another platform where I can stretch a bit, preview new work, and try new things.

Don’t worry, this won’t become an all-kolaches newsletter. We’re almost into pawpaw season here in the American midwest, and I’ve been meaning to draw some comics about pawpaws for a while. I can talk your ear off about pawpaws.

(Not everything is about kolaches, but one time I made a batch of kolaches with homemade pawpaw jam, and they were fabulous.)
