Did You Know?This month's Did You Know is about May flowers—specifically, Butterfly Blue Pea Flowers! You've probably seen these around for a while—we started carrying them several years ago and they're part of Discover Teas' caffeine-free Lavender Lemonade house blend, but they've also been sprouting up on restaurant and café menus in the US. Of course, these caffeine-free flowers have been steeped for use in food, beverages, and even as a natural dye for centuries in the Southeast Asian countries where they were originally cultivated. These days, if you see a naturally-colored citrusy drink that's a lovely deep purple shade, it's probably thanks to Butterfly Blue Pea Flower. This is due to the natural chemical reaction that takes place when a tisane of these flowers, which normally steep blue, reacts with naturally acidic ingredients such as lemon, lime, or citric acid and turns purple. It's a perfect at-home science experiment you can drink! On their own, their flavor is very mild with a hint of earthiness, so if it's a blue beverage you're looking for, you can steep them into other liquids quite easily without interfering with the desired flavor profile. 3 fun ways to use these buds would be to make ice cubes, hot- or cold-steeped into heavy cream to make blue whipped cream, or as part of making homemade jello (color may change depending on the juice or other flavoring used).
