A Vermont farm ships a gallon of maple syrup for $98. Smoky Lake's Dauntless evaporator is $3,700.70 and its own spec line is rated for 30 to 95 taps.
At the USDA yield of 0.357 gallons a tap, 95 taps makes 33.92 gallons — $3,323.67 a season.
So the first season's syrup costs $109.12 a gallon and the second costs $54.56. Break-even lands at 1.11 seasons.
