Under the Moon in Mexico
Because of one (ok, maybe a few) bad experiences with tequila in college, I turned my back on it for years. It wasn’t until much later that I dared try it again when I traveled with friends to Mexico City to visit their family. This time, no dank bar basements, no shots to the chanting of my drunk friends, no deafening music – perhaps it wasn’t the tequila after all that made me lose my mind in college. Drink responsibly.
Makes 1 drink
- 2 ounces silver tequila
- 1 ½ ounces pomegranate juice
- ¼ ounce allspice dram
- 1 teaspoon lemon verbena or lemon simple syrup (see below)
- Ice
Add the tequila, pomegranate juice, allspice dram, and simple syrup to a shaker. Add ice and shake to chill. Strain into an ice-filled rocks glass.
Lemon Verbena or Lemon Simple Syrup: Combine ¼ cup water, ¼ cup sugar, and ¼ cup fresh lemon verbena or peels from 1 lemon in a small saucepan. Heat over medium heat until the sugar dissolves, gently swirling the pan. Let cool completely. Discard the herbs or peels and strain into a small jar.
