sketchbook letters

at Bánh Anh Em:

they don’t take reservations, so you have to queue up outside to get a spot in the first seating when they open at 6pm.

jean arrived first at 5:20pm and there were 13 people in line already.

this place is super legit— they make all their bread from scratch in house and are charcoal grilling liver for their pate. it’s an insane operation happening in the small sq ft imaginable. heather and christi hadn’t watched the bon appetit video yet, so we pulled it up on a phone and had a little screening while we waited.

5:45p: watching the bon appetit video literally outside the restaurant

at 6pm, we are seated in an orderly fashion. the vibe inside is cozy and nice.
we order:

it is literally so good we immediately and unanimously agree we must order another one right away.

it’s super pillowy and soft inside, but covered with a perfactly thin, crispy sheet of crust… there are no words to describe the experience of biting into it
we get crispy pork for the second one- it’s a totally different flavor profile from the first

as christi started cutting the 2nd banh mi in half, heather whipped out her phone to record some asmr because the crackling of the crust is literally blowing our minds.

highly recommend. one of my favorite meals in nyc !
