Sumatra 🇮🇩 Weh Ilang Wet Hulled
Hello Sideyard Friends,
This week’s coffee (one day early this week) is from the Wet Ilang region of Sumatra. It’s a high grown (1600 meters above sea level), organic, wet hulled process coffee. The wet hulled process (known locally as Giling Basah) imparts a unique profile that is often lower toned, less acidic, and quite earthy. This coffee isn’t dyed in the wool wet hulled, but it is lower toned, and has less acidity on the palate than, say, the Ethiopia and Costa Rica from the past few weeks. Flavor notes include dark chocolate, blackberry, caramel, and tobacco. It’s a complex, transfixing, delightful reminder of just how varied regions and processes can be.
