Sideyard Notes: Mexico π²π½ Chipas Semi-washed π«π
Hello Sideyard Friends,
This week's coffee is from the state of Chiapas in the south of Mexico. I pushed it toward the darker end of medium. I.e., a slightly higher finishing temperature in the roaster. The first thing I noted in the brewed cup was the aroma--strawberry/almond/brown sugar. Get a good whiff!Β The cup profile starts with a darker chocolate note, but the aroma notes (strawberry/almond/brown sugar)Β are there underneath if you're looking for 'em. We've only roasted a few Mexican coffees over the years but after this one I'll be looking for more.Β
The origin track of the week is a groovy 1970's rocker...Β Felicidad by Los Dug Dug's.Β
