Sideyard Notes: El Salvador 🇸🇻 Porque Llorar
Hello Sideyard Friends,
This week's coffee is from El Salvador. The processing station, run by Alejandro Valiente, recently achieved energy independence through a combination of solar panels, wind turbines, and battery storage. How cool is that?! I have dreams of taking our home to net zero (in the last 12 months our solar panels produced more electricity than we used!), but with a gas oven/dryer/furnace we're still a ways off.Â
In the cup I'm tasting caramel, nut, and chocolate. There's a green apple note running through too but this one was roasted just yesterday and I expect it to trend a little darker as it rests over the next few days. Per usual, we have a couple extras.Â
For the origin track recommendation I'm re-upping this most excellent Los Beats cover of the Beatles Don't Let Me Down.
