Sideyard Coffee: October 17 - Rwanda 🇷🇼
Hello Sideyard Friends,
This week's coffee is from the Matyazo cooperative in the Ngororero district of Rwanda. I roasted it toward the darker end of the roast spectrum (Full City) where the flavors of the roast profile start to compete with the origin. If I had let it go for another minute or two in the roaster we would have been well into French Roast territory–at which point the origin flavors would be fully eclipsed by bittersweet and burnt flavors. I try to avoid going much darker than what we have this week mostly for this reason; I love tasting and learning about the particularities of single origins and I get a little fatigued if it all tastes the same!
Look for burnt sugars and nutmeg spice in the darker tones of this coffee and don't be afraid to add some cream. In truth, I think most coffee goes well with a touch of heavy cream–coffee purists be damned!Â
