Sideyard Coffee: March 11 - El Salvador ๐ธ๐ป Finca Miravalle

This week we're drinking a coffee from the Finca Miravalle farm in the foothills of El Salvador's Santa Ana volcano. It's a washed process coffee, which means the cherries are de-pulped before drying. This tends to produce cleaner flavors than the wild/fermented fruitiness we get from natural process coffees (see last week's Sumatra). If you take a look at the roasted beans, you'll see slightly less variation in roast level in a washed process coffee compared to a natural and this bean in particular is little smaller than average and very dense. The bean density comes slower cherry development due to Finca Miravalle's high altitude (1700-1800m above sea level).ย
It's tasting great and I can't find anything to argue with in the cup... I'm picking up on almond, caramelized sugar, and some cocoa. It has a hint of something fruity at times, but it's never top of mind. Overall it's a well balance cup with moderate acidity.ย
