Sideyard Coffee: June 24 - Costa Rica 🇨🇷 Termico ✨ & July Subscriptions
Hello Sideyard Friends,
This week's roast is a termico process Costa Rica. The experimental termico (thermic) process was developed by the owner of the processing station that processed this coffee–don Luis Campos of Cordillera de Fuego! It starts with picking only the ripest of cherries from the coffee shrubs. The cherries are then partially pulped and fermented with heat. The heat helps breakdown some of the sugars in the mucilage that's left on the seed and leads to an exceptionally sweet tasting coffee. The aroma is smelling like flowery bubblegum and I'm tasting raspberry, and hibiscus in the brewed cup. The overall impression is on the brighter side and unmistakably sweet.
The origin track of the week is Computer by Costa Rican calypso great, Walter Ferguson.Â
