Sideyard Coffee: January 8 - El Salvador πΈπ»
Dear Sideyard Friends,
This week's subscription roast is comprised of coffee processed two different ways from two distinct farms in El Salvador. One is a washed process coffee and the other was processed using the 'honey processing' method. Honey processing lands somewhere between a washed and a full natural. The coffee cherry is mostly de-pulped, but some of the sticky mucilage (looking like honey) is left on the seed while the coffee is dried in the sun. It's a labor intensive method that lends extra sweetness to the resulting cup.
Because of how the different processing methods effect roast development, they were roasted separately and then blended. The resulting cup is smooth and balanced with flavor notes of roasted almond, milk chocolate, and brown sugar.Β
