Sideyard Coffee: December 23 - Honduras ðŸ‡ðŸ‡³
Dear Sideyard Friends,
This week's coffee comes from Honduras and, perhaps appropriately, for the last roast of 2020, it's daaaark. It's very nearly French Roast-level dark, but with boutique coffee roasters pushing lighter and lighter roasts, the Overton window for what's considered dark has shifted quite dramatically of late. In the world of first wave specialty coffee roasters (Peet's, Starbucks) however, it would probably qualify as a medium roast. :) In short, it's all relative! For me, this one is very nearly too dark, but I'm glad to still be picking up notes of cherry and chocolate coming through in a darkly toned bittersweet cup. It goes well with cream and I suspect it would make great espresso. Â
If you take a closer look at the beans, you'll notice some oil spots starting to appear on their surface–a hallmark of dark roasts. As the cellular structure of the coffee bean starts to collapse with high or prolonged heat, the internal oils rise to the surface. The darker the roast, the shinier the bean!Â
