Sideyard Coffee: December 16 - Uganda πΊπ¬ Dry Process π + In Defense of Not-Quite-Hot Coffee

As it does every winter, it's about to get cold here in Chicagoland. Really cold. And the colder it gets, the more I want to be drinking something hot. Really hot. The catch however, is that it's harder to taste things that are piping hot. The tongue has a much easier time picking up on both sweetness and bitterness as temperatures drop. In other words, good coffee tastes better and bad coffee tastes, well, badder as temperatures drop. As long as you're drinking the good stuff, may I kindly recommend trading some hygge for flavor? Not-quite-hot coffee is where it's at, especially if you're grasping at tasting notes!Β
This week's roast is a coffee we bought more of because we liked it so much back in November. It's roasted a few degrees lighter than the first go around, which, as hoped, is preserving more acidity. After one day's rest it tasted EXTREMELY like a DRY PROCESS coffee. After two days the funk/fermentation notes have relaxed and I'm picking up on the importer's promise of watermelon, which had been overtaken last time around with the darker honey and fig notes.Β
Next week's delivery happens on December 23. If you're going to be out of town, we can hold your coffee or you can do a porch pickup starting Wednesday evening.Β
