Sideyard Coffee: Brazil 🇧🇷 🍫
Hi Sideyard Friends,
This week's subscription roast is from the Fazenda Santo Antonio farm in Brazil. Thales Donizete set up this farm in 2010 and has spent the last dozen years cultivating best practices in growing and processing coffee. The farm is just eight hectares (~20 acres)–tiny by Brazil standards, but larger than most farms in other regions.
Donizete's commitment to careful harvesting and processing shows through in the quality of this coffee. We roasted it to medium, which is bringing out flavors of lush chocolate, and brown sugar-candied nuts.
The origin track recommendation is Flor Destinada (Effleurer Le Destin) by Tiganá Santana.
