Nicaragua 🇳🇮 / Papua New Guinea 🇬🇳

There’s a learning curve when roasting any new coffee for the first time. Every coffee responds a little differently to heat and airflow in the roaster, such that you can’t simply copy and paste the roast parameters from one coffee to the next.
However, once you’ve learned how a specific coffee behaves in the roaster and what it tastes like, you’ve got a plan for the next time you roast it. The trouble is, there’s very few next times here at Sideyard. I’m not complaining, just setting up the idea that it feels good to roast a coffee again! It’s predictable in a way that takes some stress out of the process. Blend week affords me this simple pleasure (and sanity) of roasting two or three specific coffees for a second time. In this case, those coffees are the dry process Nicaragua we had last week, and the Papua New Guinea we first had at the end of June. It felt great to roast these coffees again and they taste great too.
If the Nicaragua was a shade too fruity or winey for some of you, you’re in luck because the PNG tones it down just enough to give it some really nice balance, while adding complexity. If you didn’t have the pleasure of trying the Nicaragua last week, you’re also in luck—despite it being toned down by the PNG, you still get some classic dry process fruited notes shining through. This blend would be a keeper if not for the fact that next week we’re on to a new roast. :) Variety is the spice of life, right? Right!
