Mexico 🇲🇽 Los Altos, Chiapas

This week’s coffee is from the Los Altos region of Chiapas, Mexico. It’s an obvious departure from the recent natural Ethiopia and Costa Rica offerings, but I’m not mad at it.

The dominant note this week is chocolate, followed by marzipan, honey, and apricot. It has some bittering roast notes that would likely make it work well in milk drinks as well.
