Mexico 🇲🇽 Chiapas Semi-Washed

Three weeks ago I replaced a thermocouple on our roaster and hoo-boy did it cause some consternation. The replacement was long overdue, but the sorta-busted one was the devil I knew and replacing it meant learning how a shiny new thermocouple reacts to heat and airflow adjustments on the roaster. After a few roasts that could have been better, I feel like my roasting legs are back under me with this week’s roast and I’m glad to have made the switch.
This week’s roast is a semi-washed process coffee from Chiapas, Mexico. The lot is comprised of coffees from 212 small holder women-growers and it’s tasting great. It’s a brightly acidic, medium-bodied cup with notes of dark chocolate, praline, and stone fruit.
For the new folks here (and those that missed this origin track recommendation the first time around), Fiesta Forever by the Pachanga Boys is as silly as it is ear worm-y.
