Costa Rica 🇨🇷 Tarrazú
Hello Sideyard Friends,
This week’s coffee comes to us from the Tarrazú region of Costa Rica. It was processed by the Cerro La Cruz mill as a “white honey”, which means that most, but not all, of the cherry pulp was removed with a mechanical pulping machine before it was put out on a patio to dry in the sun. This process makes for a clean, sweet, and bright cup that one could argue shows off a truer picture of the coffee (as opposed to other processing methods like full honey/dry process/anaerobic). In reality, everything that happens after picking changes flavors in some way, but I digress.
The flavor profile includes dark sugar, molasses, caramel, bright tea, and lemony accents.
This week’s origin track recommendation is the 1970s latin jazz Noche De Lluvia En San José by Combo Guarajeo.
