Colombia Pink Bourbon 🌸
Hello Sideyard Friends,
This week’s coffee is a Pink Bourbon varietal from Colombia. Unlike most coffee cherries that turn red when they’re ripe, Pink Bourbon is pink when ripe, which makes harvesting difficult. If you wait till the cherries are red, it spoils. The shrubs also produce fewer cherries and don’t live as long. The upside is that it produces a sweeter and fruitier coffee than your average washed process coffee varietal. The cup starts as a solid medium roast with a nice snap of acidity and mild roast development, and gets sweeter and fruitier as it cools. I get a cotton candy vibe from the sweeter aspects of the profile once it’s cooled down.
