Clearly Incorrect

Hey there - we just published a new essay.

The idea arrived after seeing yet another clip of Gordon Ramsay saying that you need to take your steak out of the fridge at least 10 minutes before searing it. I knew (thanks to J. Kenji Lopez-Alt) that this was wrong. I’ve known about it for years.

So I wondered: why does Gordon Ramsay keep saying this thing that is clearly incorrect? Does he even care?
