Turkey is usually the star of the show for a big Thanksgiving meal, but I may be in the small minority that thinks the vegetables (and cranberry sauce/relish) are the unsung heroes. This week, I tried out recipes for roasted carrots, creamed spinach, and blanched-then-sautéed green beans with shallots. The spinach and green beans were hits.
