Old-Fashioned Apricot Chicken

Serves 6 · 1 hour

Remember this retro favourite from dinner parties past? Apricot chicken is making a comeback, and for good reason—it's wonderfully easy, uses pantry staples, and the sweet-savoury glaze is absolutely delicious over rice.

8 chicken thigh fillets, trimmed, Salt and pepper to taste, 2 tbsp olive oil, 1 large brown onion, diced, 2 cloves garlic, crushed, 425g can apricot nectar, 40g packet French onion soup mix, 410g can apricot halves in juice, drained and halved, 2 tbsp soy sauce, Fresh parsley, chopped, to serve, Steamed rice and green beans, to serve

Method

1. Season chicken with salt and pepper. Heat oil in a large frying pan over medium-high heat and brown chicken for 3-4 minutes each side. Remove and set aside.

2. In the same pan, cook onion for 5 minutes until softened. Add garlic and cook for 1 minute. Return chicken to the pan.

3. Combine apricot nectar and soup mix, then pour over chicken. Add soy sauce and stir gently. Bring to a simmer, reduce heat to low, cover and cook for 35 minutes, turning chicken halfway through.

4. Add apricot halves in the last 5 minutes to warm through. The sauce should be thick and glossy. Sprinkle with parsley and serve over steamed rice with green beans on the side.
