Recipe of the Week Every Saturday we share a recipe worth trying. Classic Pavlova with Fresh BerriesServes 8-10 · 2 hours (plus cooling) No Aussie celebration is complete without a pavlova! This showstopper dessert is easier than you might think, with a crisp meringue shell and marshmallow centre that's perfect for summer gatherings or Christmas lunch. 6 egg whites, at room temperature, 1½ cups caster sugar, 2 tsp cornflour, 1 tsp white vinegar, 1 tsp vanilla extract, 300ml thickened cream, 2 tbsp icing sugar, 250g fresh strawberries, hulled and halved, 125g fresh blueberries, 125g fresh raspberries, Passionfruit pulp to serve (optional) Method 1. Preheat oven to 150°C. Line a large baking tray with baking paper and draw a 20cm circle as a guide. 2. Beat egg whites with electric beaters until soft peaks form. Gradually add caster sugar, one tablespoon at a time, beating well after each addition until mixture is thick and glossy. Beat in cornflour, vinegar and vanilla. 3. Spoon meringue onto the circle, creating a shallow well in the centre. Place in oven and immediately reduce temperature to 120°C. Bake for 1½ hours, then turn oven off and leave pavlova inside to cool completely (this prevents cracking). 4. Just before serving, whip cream with icing sugar until soft peaks form. Spread over pavlova and top with fresh berries. Drizzle with passionfruit pulp if using. |
