The NSW Fancy Rodent Society is showcasing 'happy, healthy, functional and friendly' animals at this year's Royal Easter Show, where winners are decided by a whisker. Easter highway closure adds 5-hour detour

Anzac-Inspired Oat and Date Slice

Serves 12 · 35 minutes

A delightful twist on the classic Anzac flavours that's perfect with a cuppa and easier to slice than traditional biscuits.

2 cups rolled oats, 1 cup plain flour, 1 cup brown sugar, 1 cup desiccated coconut, 1 cup chopped dates, 125g butter, 2 tbsp golden syrup, 1 tsp bicarbonate of soda, 2 tbsp boiling water

Method

1. Preheat oven to 180°C and line a 20cm square tin with baking paper.

2. Combine oats, flour, sugar, coconut and dates in a large bowl.

3. Melt butter and golden syrup together in a saucepan.

4. Dissolve bicarbonate of soda in boiling water and add to butter mixture.

5. Pour wet ingredients over dry ingredients and mix well.

6. Press firmly into prepared tin and bake for 20-25 minutes until golden.
