New washed rinds in from the Pyrenees and Belgium!

Greetings!
A new week brings with it some fresh arrivals from two of our favorite producers:
Bethmale Vache from Jean Faup. A semi soft, raw cow’s milk, washed rind that is both rich and toasty. Those familiar with Behtmale Chevre can attest for the quality and consistency of the Faup cheeses.

The powerful Herve makes its return just as another cold snap begins. Hailing from Belgium, in the region of its namesake, these raw cow’s milk cheeses have a cult following amongst washed rind lovers. While in their youth, the pungent rinds will give way to a subtle, milky paste. With age these cheeses become brothy and full, perfect for seeing one through the tail end of winter.
