New batches of Sao Jorge in!

The sharp and punchy Sao Jorge, a raw cow’s milk cheese from Azores (Portugal) is back. We have primarily sold this cheese on the younger side, but we are lucky enough to have a few 12 month wheels available.

The island of Azores provides optimal conditions for cheesemaking; damp climate; volcanic soil; large variety of vegetation for cows to graze upon. All of these factors contribute to a cheese that is full of life and character.

Sao Jorge is unique in that it comes across as a hybrid of so many styles. Traditional clothbound cheddar or Salers comes to mind, but there is a pronounced spiciness which is synonymous to many Italian pecorino’s. It is also a cheese that evolves dramatically with age. A younger cheese will be buttery with pronounced spice, while older batches will give off deep, caramel like notes.

It appears a heatwave is arriving in London, so one can pretend they are basking in the Portuguese sun. Deal? Deal.
