FEBRUARY 2025 WEEK 1 - WHOLESALE TEAM UPDATE

FEBRUARY 2025 - WEEK 1
Christmas behind us, cold nights and grey days have got us yearning for melty, rich goodness to warm our hearts and bodies. Our Winter range bustles with delicious dairy to impress and delight your customers.
In season this month

Vacherin Mont D’Or
Blink, you’ll miss them; eight weeks to go before this unctuous miracle ends production until October. Beneath bubbling crust lies silky, smooth interior with the depth of savoury clotted cream, heightened with baking and serving with crusty sourdough.
Saraceno, Ragusano and Siciliano Pecorino - Imagine our excitement when these ewes’ milk Italian hard cheeses arrived this month. Superb, unique alternatives to grate on hearty pasta dishes, each with their own distinctive characteristics.
Alp Loch (Bergkaese)
This Bavarian behemoth proves a cheeseboard smash as well as the kitchen for a fun spin on traditional fondue. A pressed Alpine not unlike Gruyere or Comte, with brothier and mushroomy notes, traditionally crafted by the Fuchs family using only Summer milk.
Blackmount
Scottish stalwarts of artisan cheese Errington in Lanarkshire lovingly craft these charcoal-dusted pyramids ready for ripening in our cellars. Subtle vegetal bitterness gives way to a fluffy, lemony centre to satisfy any true fanatic of chèvre.
Fourme d’Ambert
France’s answer to Blue Stilton and a cheeseboard essential, pockets of blue punctuate the creamy cylinder for a deep, piquant flavour with a lingering finish. Lend its tang to a particularly memorable cordon bleu.
