Comte. Lets talk profile.

A short and sweet check in this week. After our visit to the Jura, it was abundantly clear that no two Comte are ever alike. These are living, breathing cheeses, all with unique variables. Our current lineup highlights this:

Marcel Petite Elegance (August 2024) - We have referred to this as our, “Cooking Comte,” in the past, but that sells Elegance short. Floral, sweet and light, almost bee pollen like. Perfect for this time of year.

Marcel Petite Fort St. Antoine Reservation (August 2023) - Our current top dog. Prime summer milk with some significant age. Complex floral notes evolves into caramel and then back again. A real thinking cheese.

Marcel Petite Fort St. Antoine Reservation (November 2023)- Winter milk Comte which gives a much fuller, rounded flavor than our summer milk cheeses. Very milky and subtle, perfect for those looking to enjoy over long picnics or dinner parties. Dare I say a, “session,” cheese.

Suchaux Comte (October 2022) - The heavyweight champ. A workhorse. The Comte we utilize from Suchaux are for those who want to go big. Salted peanut butter and a good amount of acidity to balance, without leaning bitter. Calling for larger wines.

We always encourage specificity when it comes to our Comte, and the profiles above teach us why.
