Slaw, lentils and alternative 🥛

Good morning and happy spring! Here are some things I've been eating, cooking and reading this week.

The cabbage battle continues

This Thai Slaw with Peanut and Lime Dressing is quite enjoyable, though your guess is as good as mine as to how Thai it is.

I used the full quantity of dressing but with at least twice the quantity of vegetables that's called for, and I thought it was the right proportion. Serve with some baked tofu and you've got a meal.

Current fridge cabbage status: 1/2 napa, 1/2 red and 1 green. Think good thoughts.

A couple of almosts

I made these Marinated Lentils with Crunchy Vegetables and found them surprisingly bland. I did overcook mine a bit, but they basically soaked up all the oil and vinegar and then some. But the reviews are all good, so perhaps this was user error?

I also made these Roasted Beets with Horseradish Cream, except I was out of sour cream so I used yogurt, and I think they would have been better with sour cream? Next time I might toss the beets with the dressing instead of drizzling.

For your sweet tooth

These Chocolate Tahini Energy Bars are delicious.

Online this week

Chatelaine tested 10 different plant-based milks specifically for how well they go with coffee.

The New York Times has some tips on cooking with plant-based meats.

And, I know that they styled everything for the shoot, but I am still inspired to organize my fridge thanks to this Toronto Life "inside the kitchen" piece on Sweet Hart Kitchen's Alex Courts.

The lunch date

I've been a fan of Nutbar forever, and I especially love their new-ish Leslieville restaurant. (They started at Summerhill and also have a location inside Sweat & Tonic across from the Eaton Centre.)

The chocolate smoothie is one of my favourites, and I also adore their toasts and the namesake nutbar, a chocolate-y energy bar. One plus at Leslieville: eat in and they serve you in real dishes instead of all the disposables elsewhere. (Though, I will say that they have the most beautiful takeaway coffee cups in the city.)
