two recipes deborah made for dinner
we were talking about the phrases used to describe sunshine while it's raining in different languages (i heard "the devil is beating his wife" so much growing up in the south 😬) and the generally agreed upon term is "sunshower" but my favorite was "in Scotland, when rain falls from a clear blue sky, it’s called ‘lauchin’ rain`" which " literally means, laughing rain."
the pharmacy didn't have my new insurance so they were charging too much for the new generic statin i'm going to start taking but they didn't put the group number on the new insurance card and supposedly the group number was on the website but first i couldn't log into the portal of the benefits service and eventually was told by HR that i needed to log into the portal of the other benefits service and then log into the second service through that and then when i got in i found that the group number wasn't there and instead was supposedly on the insurance website and then trying to register at the portal there so i could access it i got stuck in an unbreakable loop of being partially but not completely registered and then i just asked a coworker what the group number was and she told me
the two recipes that deborah made for dinner the last two nights which were both great
one pot mushroom rice, adapted from cook with dana: https://cookwithdana.com/one-pot-mushroom-rice/#recipe makes 2 servings
- soak 1 cup rice in 2 cups water, in the rice cooker pot
- meanwhile, slice: - 1 giant portobello mushroom (quartered, then sliced) (i would have used shiitake but i couldn’t find any at the store)
- mince: - 1 tbs ginger (grated frozen, didn’t mince) - 3 garlic cloves - 1 shallot
- wash rice until it rinses clean (about 4-6 times). drain all water
- add to the rice: - 3/4 cup water - 2 1/2 tbs soy sauce (i will add 1/2 tbs fish sauce to this next time, the recipe calls for a dark soy sauce too but i couldn’t find it) - 1 tbs oyster sauce - 1 tsp sugar - 1 tbs olive oil
- cook in rice cooker (white rice setting)! should take around 45 min
- slice 1 green onion
- air fry 2 chicken thighs (400ºF for 12 min, salt & pep, flip, season again and cook for 8 minutes)
- shred chicken
- divide rice into two bowls, add chicken, add green onions
cucumber salad, adapted from a tiktok recipe i found when looking for din tai fung cucumber salad
- mix:
- 2 tbs soy sauce
- 1 tbs rice vinegar
- 1 tbs honey
- 1 tbs gochugaru
- 1 tbs sesame seeds
- 1 tsp sesame oil
- 2 green onions, sliced
- 1 clove garlic, minced
- slice 1 cucumber and combine with the sauce (i usually slice the skin off, halve the cucumber length-wise, slice into half-moons) (usually u use persian cucumbers but i just used a regular one)

marathoning old seasons of The Real World with Deborah (currently the Philadelphia season from 2004, streaming on Paramount+), which after watching so much bloated repetitious sometimes slightly more ethically responsible contemporary reality tv is like going from prog to punk: messy sharp-edged action-packed (and alcohol-soaked) episodes that are all exactly 20 minutes long.
