Wherever you look, cheap supermarket meat has made life hard for butchers. At the same time, a few younger people are taking much more of an interest in butchery. I shouldn’t have been surprised that many of them are women, three of whom — Martina Bartolozzi, Sophie Minchilli and Olivia Potts — agreed to tell me their stories.
