William Rubel is a freelance food historian, and he takes a dim view of some of the claims made by modern artisan bakers. I thought it only right, having given the artisan bakers a bit of a platform, to offer William the chance to explain why he’s not happy with their talk of a sourdough revival and other aspects of bread culture.
