Vibe Check
From an older version of my brain, to yours.
For those keeping track, I am officially extremely late with this month’s Musings! L-O-L
It’s been an incredible, full, fulfilling, and moving month for me. I know mid-August is only a couple weeks away—and I will have a LOT of news—but I didn’t want to let July slip by without saying Hello, how are you, and I’m thinking of you all. **heart eyes**
Here’s a light little something to tide you over...
Q&A Corner
JB asks:
What’s your go-to ‘fancy dinner’ menu for when you have to host on short notice? Appetizer, main, dessert, cocktail or wine…?
At the risk of revealing that I am totally uncouth, I have to tell you that I rarely do appetizers when I host a dinner! I tend to have some snacky things and drinks in the kitchen for guests to nosh while they hang out with me as I finish cooking the main. We’re not much for cocktails, either, in our house. I am actually allergic to alcohol (no, seriously, please don’t test it) and my darling husband prefers microbrews and really good whisk/e/y. We will crack open a good wine if it’s called for, though. Even though I don’t drink, I try to be knowledgeable about wines and whatnot, so I can recommend or pair bevvies for friends.
The easiest “fancy” main in my arsenal is salmon with lemon butter caper sauce, accompanied by roasted parmesan cauliflower and…brown rice, if you can believe it. The nuttier flavour of brown rice is just so perfect for this dish. My family LOVES a lot of capers in this sauce, and I love a lot of butter (tee hee), but of course, YMMV.
In a pinch, ice cream is my go-to dessert. Also: fresh fruit. For this meal, I’d go with vanilla bean ice cream or lemon sorbet, with blackberries or raspberries or blueberries or all three together. If I had to make something more substantial, I’d do lemon cupcakes.
Thanks, JB, for this fun one.
Please keep your questions coming, lovelies! Use this form so I don’t lose track.
See you all in mid-August!
