Herdshare Update: Cheese!
Dear shareholders,
There's (finally!) enough milk that I've started making soft cheese again regularly. I call it "Spring Creek" and it's something like feta-meets-mozzarella-meets-chevre. It's great on a cracker (or a fork) but in my opinion, it really shines as part of bigger recipes: pizza, tacos, scrambled eggs, baked ziti, crumbled on a salad, and so on.
It's available in two amounts:
- Quarter wheel (at least 3/4 lb, up to 0.95 lb): $7
- Half wheel (at least 1.5lbs, up to 1.9lbs): $12
As noted, the weight of each portion may vary -- it depends on exactly how much milk I'm working with and how they divide into individual cheeses. I try to keep them large!
